Camera and Cupcakes

My camera arrived!  I bought my first SLR digital camera after years of dreaming about owning one and borrowing friends’ cameras any chance I got.  I still have much to learn about photography, but the idea amazes me.  Trying to capture life in one single moment and drawing focus.  So, exciting.  Some of my first pictures are below.

This weekend I read a blog post from my friend the Boastful Baker.  She made coconut lime cupcakes and included the recipe she used.  What a wonderful summer cupcake and way to use up the leftover coconut flakes from my coconut shrimp recipe.  The Process: I don’t own a mixer right now.  My reason was to see what I could bake without machines to help me.  Prove I didn’t have a dependency on electricity (yes this has limits I have an electrical oven) and what was possible to create using modern cookbooks and well, my hands.  I started simple, but now I’m progressing and slowly learning the limits of doing things by hand / benefits of having mechanical tools to help me.  1. Appearance / presentation. Turns out one of the things I can make is flat (but yummy) cupcakes.

The recipe I used can be found here: Coconut Lime Cupcakes

These cupcakes are truly delicious, but I cannot believe you whipped the icing by hand!
