This recipe is by far one of the easiest and fastest recipes I have ever made. It only takes a few minutes and very few ingredients, but the results will have you smiling for days.

Switch it up and add chocolate chips, craisins, pecans, make cookie sandwiches, etc. The result will always be the same, a delicious, aromatic, mouthwatering cookie that will keep everyone coming for more.

Tips for Baking the Best Oatmeal Cookies

  • Butter and eggs need to be at room temperature. This will ensure an even, well baked batter.
  • Use the best quality ingredients. I prefer organic old fashioned oats, and organic brown eggs.
  • Don’t overcrowd the baking sheet, leave enough space between cookies so they can bake without sticking together.
  • Once out of the oven, leave cookies in the baking sheet for two minutes, then transfer to a cooling rack.
  • Hide them, if you want them to last!!!

Oatmeal Raisin Cookies

Ingredients
  

  • 8 oz unsalted butter 2 sticks
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 ea large eggs slightly beaten
  • 1 tsp vanilla extract
  • 2 cups AP flour
  • 1 tsp baking soda
  • 1 tsp salt
  • tsp cinnamon
  • 3 cups quick oats
  • ½ cup raisins (craisins work well too) optional

Instructions
 

  • Preheat oven to 375°
  • Line a baking sheet with parchment paper
  • Set your stand mixer with the paddle attachment
  • Cream the butter and sugars on medium to high speed until light and fluffy.
  • Beat in the eggs one at a time, mix well after each addition.
  • Add the vanilla extract
  • In a separate bowl. combine all the dry ingredients, except for the oats, then give them a quick whisk.
  • Add the dry ingredients to the batter and m ix until well combined. Turn the mixer off then scrape the bowl with a rubber spatula to ensure all ingredients are well combined.
  • Add the oats and mix just until combined.
  • Add raisins and mix just until they incorporate to the dough
  • Scoop the dough to the prepared baking sheet
  • Bake for about 8 minutes.
  • Let them cool on the baking sheet for two minutes, then transfer to a cooling rack.
